Eat Up!

After my snowy drive home from what seemed like the longest day ever at work yesterday, Jordan surprised me with homemade chili for dinner :) Which was not only delicious, but also perfect because I know my diet has been lacking protein lately.

I wanted to share this recipe because we both loved it, and it is hard to find a good vegetarian chili recipe. I know you meat eaters are cringing, but just think of all the saturated fat you are saving your heart from, and all that fiber your body needs!
